The 2019 Chinese Limited Edition Chocolate Art is an ‘East-Meets-West’ collection that is custom designed and hand-crafted specifically for the 2019 Chinese New Year celebration. The collection features specific sweet ingredients for their symbolism in Chinese traditions including; Prosperity - Good Fortune - Longevity – Wealth, yet is crafted using modern French based chocolate-making techniques. Each chocolate within the 2019 CNY Collection is filled with an Encapsulation gelée specifically processed (pressure cooked and/or sous-vide) and scientifically formulated based on the specific aromatic molecular make-up of each ingredients and their similar compounds synergy. It is then flash cooked to a low brix % so that it retains all aromatic properties and blended into a soft texture. The second filling features a rich and smooth Nut Praliné (hazelnut or peanut) butter & milk chocolate cream laced with crispy French 'crêpes' cookies for a texture contrast. Each filling is encased in our own house blend 70% bean to bar chocolate made from single origin cocoa beans and painstakingly hand-painted and/or air-brushed with cocoa butter colours in the traditional ‘red-and-gold’ scheme. Vintage cocoa bean-to-bar chocolate-making, on an artisan basis, is a long and labor-intensive process with numerous steps, many of them involving a scientific approach. This Collection is packaged in our exclusive Limited Edition Wild Sweets® CNY box and features the following assortment of flavours;

  • Lychee Yuzu encapsulation gelée & Hazelnut lemon zest oil praline cream

  • Mandarin kumquat encapsulation gelée & Peanut coriander praline cream

  • Persimmon apricot encapsulation gelée & Hazelnut vanilla bean praline cream

  • Chestnut cranberry encapsulation gelée & Peanut Sichuan pepper praline cream

Serving Size: Sold in gift boxes of 12-units (168g @ 14g each). Each gift box is sold in the customary individual red gift bag with a Wild Sweets logo branding.

Serving/Storage: Chocolates must be stored at 16°C/60°F or less, away from heat and/or sunlight. Collection must be consumed within 4-weeks from date of production and/or purchase, which ever comes first.
