The Wild Sweets® ‘Fleur de Sel Vanilla Caramel Ganache’ features our own 70% cocoa bean to bar chocolate made from a house blend of cocoa beans emulsified into a caramel ganache crafted with fresh cream, butter and fleur de sel sea salt. The filling is encased in dark chocolate moulds that are air-brushed with cocoa butter colour into an artistic ‘minimalism’ pattern. Cocoa bean-to-bar chocolate-making, on an artisan basis, is a long and painstaking process with numerous steps, many of them involving a scientific approach.
