Chocolate 'Petite Cake' Series: Coffee / Red Fruits / Caramel

Synopsis: Our Wild Sweets® Chocolate Constructivism ‘Petite Cake' Series is designed to provide contrasts via various layers of different textures. At the bottom, the cake architecture starts with a crunchy hazelnut chocolate praline cream with crispy crêpe flakes. Next, is a layer of rich and moist butter cake, which is then topped with a very soft crème brûlée type cream. And lastly, a very light and airy sabayon-method dark chocolate mousse finishes the cake. The cake is decorated with a dark chocolate coating and paper thin shapes of white chocolate hand-painted with cocoa butter colours. We have 3 'Petite Cakes' flavours available and select option in the pull down menu below. Specifically;

  • Coffee: the cake for this version is a hazelnut and brown butter called 'Financier' while the cream is an organic coffee infusion


  • Red Fruits: the cake for this version is a French specialty called 'Madeleine' while the cream is a mixture of red fruits (I.e. strawberry, raspberry)


  • Caramel: the cake for this version is an almond based cake called 'Pain de Genes' while the cream is a salted butter caramel.

All cakes are sold as a 'Kit' with our unique all natural 'Chocolate Tea' (x 2 Tea Bags = 6 serving @ 250 ml each - tea bags only / not as pictured)

Our unique all natural 'Chocolate Tea' is made entirely from pure in-house roasted cocoa beans / husks only and some vanilla bean powder - no sugar and/or any other ingredients! The tea maybe brewed with some additional aromatic ingredients such as fresh lemongrass, fresh citrus zest, etc. This unique sugar-free infusion is a healthy beverage alternative to coffee as cocoa beans are rich in powerful antioxidants such as polyphenols and naturally contain very low levels of caffeine (less than 10-times that of coffee per serving).

Serving/Storage: Frozen cake will keep for up to 1-month in a good working freezer (-18°C). Best consumed within 2-days after thawing and keep any left over cake in the refrigerator wrapped in plastic cling film to prevent drying out.
