The Wild Sweets® ‘Herb & Spice Fruit Caramel Ganache’ features our own 70% cocoa bean to bar chocolate made from our house blend cocoa beans emulsified into a ganache with fresh cream and liquid caramels made from 100% fruit juices infused with different herbs and/or spices. The fillings are encased in dark chocolate moulds that are air-brushed with different cocoa butter colours into an artistic ‘minimalism’ pattern. Cocoa bean-to-bar chocolate-making, on an artisan basis, is a long and painstaking process with numerous steps, many of them involving a scientific approach.
