Synopsis: Each layer of this cake provides a different texture, including a delicately soft jelly coating, cloud-like mousse, unctuous cream, rich ganache and crispy/crunchy base. We have 2 chocolate 'Sabayon' cake versions available and select option in the pull down menu below. Specifically;

  • Raspberry Dark Chocolate: Layers of Sablé Breton cookie, crispy crêpes hazelnut praliné, dark chocolate & raspberry fruit ganache, raspberry fruit Crème Brûlée cream, blended dark chocolate caramel sabayon mousse and crème fraîche gelée, elegantly finished with hand-painted chocolate barks and decor.

 

  • Passion Fruit Milk Chocolate: Layers of Sablé Breton cookie, crispy crêpes hazelnut praliné, milk chocolate & passion fruit ganache, passion fruit Crème Brûlée cream, blended milk chocolate caramel sabayon mousse and crème fraîche gelée, elegantly finished with hand-painted chocolate barks and decor.

Suggested Pairing: Hot Chocolate, coffee or a sweet fortified wine such as Portuguese LBV Port, California Black Muscat and/or Australia Liqueur Tokay.

Servings: 1100g / 10 to 12 portions [Standard serving = 110g / person]

Serving/Storage: This dessert must be stored in the fridge at all times and consumed within 48 hours of purchase. Remove from the fridge at least 1 hour before serving to allow it to reach the perfect serving temperature.
