This is our Wild Sweets® Chocolate Constructivism take on the classic Cheesecake that we call ‘Gateau Fuwa’ - an ‘East-Meets-West’ version that blends French with Japanese elements & techniques. Unlike the North American cheesecake – a rich, sweet and dense cake – our ‘Gateau Fuwa’ has a light and fluffy mousse-like texture, which is the typical form of cheesecakes in Japan also known as ‘soufflé’ cheesecake! The term soufflé, a classic French dessert, refers to the procedure of incorporating an egg white batter or ‘meringue’ into the cream cheese mixture, which is then cooked in a bain-marie to produce a soft, chiffon-like consistency. Our additional European take on this Japanese cake includes a Sablé Breton cookie base – instead of the graham cookie mixture – as well as a cloud-light whipped white chocolate ‘Chantilly’ cream topping the cheese cake. And finally our Gateau Fuwa is finished with seasonal fresh fruits, herbs, rasping of fresh citrus zest, crispy pearls and hand-painted chocolate decor.

Suggested Pairing: Hot Chocolate, chocolate tea, coffee or a sweet sparkling wine (I.e Moscato d’Asti), sweet fortified wine such as Portuguese LBV Port, California Black Muscat and/or Australia Liqueur Tokay.
