This is our Wild Sweets® Chocolate Constructivism take on the classic Chocolate Mousse Cake that we call ‘Gateau Soufflé’ - a novel interpretation on the French dessert in both elements & techniques. Unlike the classic version, our ‘Gateau Soufflé’ mousse portion has the identical ingredients (chocolate, eggs, whipped cream) and the same light and fluffy mousse texture, but the mousse mixture is baked rather than cold set in the fridge with gelatin. As a result, the mousse portion of the cake is more of a ‘soufflé-like’ as the whole eggs are hot whipped into a foam, incorporated into the chocolate along with a red berry fruit purée, whipped cream - as in a traditional mousse - but instead cooked in a bain-marie to produce a soft, soufflé-like consistency. Our additional take on this classic include 2 French elements: a Sablé Breton cookie base as well as a cloud-light whipped white chocolate ‘Chantilly’ cream topping the chocolate mousse cake for texture contrast. And finally our Gateau Soufflé is finished with seasonal fresh red berry fruits, crispy pearls, rasping of citrus zest and hand-painted chocolate decor.

Suggested Pairing: Hot Chocolate, chocolate tea, coffee or a sweet sparkling wine (I.e Moscato d’Asti), sweet fortified wine such as Portuguese LBV Port, California Black Muscat and/or Australia Liqueur Tokay.
