This Wild Sweets® Constructivism confection is our distinct version of the French classic ‘Mendiants’. Our take on this chocolate confection is different primarily on two aspects. One, it is crafted from our own Vintage cocoa bean to bar dark chocolate (except for the white chocolate) featuring a blend of Peru, Venezuela and Dominican Republic origins. Two, these Mendiants have been specifically designed & crafted to be paired with various wines including white, red, sweet, fortified as well as beer. As per the classic version, our Mendiants include a mix of dried fruits & nuts. However, some of the fruits have encapsulated by being cooked sous vide in a specially formulated aromatic poaching liquid then dehydrated at low temperature while the nuts are ‘savoury’ in preparation. And both fruits and nuts have been selected for their pairing synergy based on aromatic compounds such as cinnamaldehyde, anethole, eugenol, etc. We also add an additional textural and aromatic element in the form of a pâte de fruit (fruit jelly) that is rolled in an aromatized sugar again designed for its pairing compatibility. These Mendiants offer a multi-textured confection from the soft, chewy to crunchy spectrum, again specifically designed for chewing rather than melting (i.e. chocolate bar only) thus providing a better suited textured for chocolate and wine/beer pairing. The assorted box include the following Mendiants;

  • White Wine – white chocolate, encapsulated spiced dried apples, pineapple/passion pâte de fruit, salted fried Marcona almonds.
  • Red Wine – dark chocolate, encapsulated spiced dried pears, red fruits pâte de fruit, dried cherries, salted fried Marcona almonds.  
  • Sweet Wines – white chocolate, spiced dried apricots, apricot/passion pâte de fruit, salted fried Marcona almonds.
  • Fortified Wine – dark chocolate, dried plums & cherries, black fruits pâte de fruit, salted fried Marcona almonds.
  • Beer – dark chocolate, dried plums, plum/beer pâte de fruit, hickory smoked almonds.

Serving Size: Sold in gift box sleeve of 5-units (100g @ 20g each)

Serving/Storage: Chocolate Mendiants must be stored at 16°C/60°F or less, away from heat and/or sunlight. Best consumed within 3-months from date of purchase.
